Before the 17th Century, carrots were actually purple (with an occasional yellow or white one). However, the Dutch growers, wanting to improve upon the quality of vegetables, began experimenting with strains of carrots. Several generations later, we have become accustomed to orange carrots, thanks to the heroic horticultural habits of the Dutch.
